A study at University of Illinois at Urbana-Champaign fed rosemary extract to rats who had been exposed to exposed to dimethylbenzanthracene, a carcinogen that causes breast cancer. Both the DNA damage and tumors decreased with the rosemary. Obviously they have to do human studies but it no doubt shows that rosemary has a lot of cancer-protective potential. It doesn’t hurt to add this miracle spice to your cooking arsenal.
To maximize the benefits and to reduce HCAs, you can marinate your chicken in any of those supermarket spice mix packets that contains rosemary. Such spice packs may also contain other good herbs such as thyme, oregano, basil, garlic, onion, or parsley. If you have a rosemary bush you can really take advantage of this spice too. Take the branches and cut several. Then wash carefully under hot water. When grilling chicken put the rosemary branches right on top. Your chicken will turn out wonderful and you will get your take of this excellent miracle herb.
